Morning Glory Stir-Fry

Ingredients:

  • 1 bunch of morning glory leaves, washed and chopped
  • 1 tablespoon of olive oil
  • 1/2 onion, chopped
  • 1 clove of garlic, minced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 teaspoon of ginger, minced
  • 1/4 teaspoon of red pepper flakes
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions:

  1. Heat the olive oil in a large skillet or wok over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell peppers, ginger, red pepper flakes, salt, and pepper and cook for another 5 minutes.
  4. Add the morning glory leaves and cook until wilted, about 2 minutes.
  5. Serve immediately.
